Pina Colada Recipe

One of the great parts about summer is refreshing cocktails.  Many of us simply use store-bought mixes or forego cocktails altogether because we are intimidated by them, but there is not reason to be.  Most people can make delicious cocktails with only a few ingredients and little work.  Homemade cocktails taste better than pre-made mixes and have the added advantage that you know what is in them.  This Pina Colada recipe is a great way to unwind after a long week at work.  It uses fresh coconut milk and pineapples for a crisp, clean tropical taste.  It is sure to take you to your own personal tropical paradise. Enjoy


Pina Colada Recipe

serves 4



2 cups ice

1 cup coconut milk

1 cup pineapple juice

1/2 cup rum

1/2 cup fresh pinnacle (canned is ok, too)

4 tablespoons sugar



Place all the ingredients into a Vitamix or other blender.   Blend the mixture for 60 seconds on high or until all the ice is chopped and the mixture has the consistency of a smoothie.  Pour the mix into four glasses.  Garnish with a pineapple slice, orange slice, and maraschino cherry.
