Being a father of four kids has its benefits and its challenges. Feeding my kids healthy, nutritional food is one of them. Add the fact that two of my kids have celiac disease, meaning they can’t eat any wheat, barley or rye products, and the challenge becomes even greater. My wife and I don’t want to load them up on sugar, but we also realize that having sweet treats is a part of living. Carrots are great, especially with humus, but sometimes humans need to indulge. Every parent most likely feels this tension.
In an attempt to make snack foods that are not overloaded with sugar and artificial dyes, but are savory and sweet, my wife created this healthier muddy buddy recipe. It is an easy snack to make, has very little sugar, and will be sure to please kids and adults alike.
Healthier Muddy Buddy Recipe
9 cups rice and corn Chex
1 cup dark chocolate chips
1 cup coconut flakes
1/2 cup almond butter
1/2 cup powdered sugar
2 tablespoons coconut oil
Add the various Chew cereals to a large mixing bowl. Set aside.
In a microwave safe bowl, add the chocolate chips, almond butter and coconut oil. Microwave for one minute on high. Stir the mixture. Add back into the microwave for another 30 seconds to a minute, or until all the chocolate is melted. Add the powdered sugar. Stir until the mix is homogeneous.
Pour the melted chocolate mixture over the Chex mixture and toss until all the pieces are covered. Add the coconut flakes and stir again until the cereal has a light layer of coconut dusted over all of it. Let the desert rest for a few minutes so the chocolate hardens and the flakes are glued to the cereal. Enjoy!
