Cinnamon Toast Crunch Chicken and Waffles Recipe

Chicken and Waffles is an abnormal pairing of foods.  Typically fried chicken served along side waffles with syrup and butter.  Regardless, it is an extremely popular dish, especially in the North East of the United States.  Over the years many soul food restaurants have opened across the country that specialize in chicken and waffles.  Still, there are many who are unfamiliar with this combination.

I wanted to make this recipe a little more fun and alluring for those just getting started so I crusted the chicken with Cinnamon Toast Crunch cereal.  Chicken and waffles are two complimentary flavors and the cinnamon enhances both while bridging the flavor gap for skeptics.  I’m also not so great at frying chicken (and not everyone has a deep fryer) so the chicken is baked instead.  The result is crispy Cinnamon Toast Crunch Chicken and Waffles.

Other shared compliments to chicken, waffles and cinnamon are maple syrup, butter, apples and bananas.  You can mix tiny bits of apple and banana into the waffle batter for extra credit.  Because Cinnamon Toast Crunch is loaded with sugar I would recommend going easy on maple syrup when you are finished and to use salted butter to offset the sugar unless you want a headache.

I’ve included a waffle recipe but if you have your own or don’t have a waffle maker use whatever waffles you wish.


CINNAMON TOAST CRUNCH CHICKEN AND WAFFLES

Start to finish: 45 minutes

Servings: 4 – 5


Preheat the oven to 400°.   Line a baking pan with aluminum foil and cooking spray.

In a shallow dish combine flour, salt, pepper and coriander.  In another shallow dish beat the eggs.  Fill a third dish with crushed Cinnamon Toast Crunch cereal.  Coat each piece of chicken in flour mixture, then egg, then cereal and place on baking pan.  Spray the cereal coated chicken with nonstick spray.

Bake the chicken 8 minutes then flip and bake an additional 8 minutes.  Flip once more and allow the chicken to bake until the internal temperature is 165° and cooked through (approximately 10-12 minutes, though times may vary).

While the chicken bakes make the waffles.  If following the recipe provided mix flour, sugar, baking powder and salt in one bowl; and the milk, vegetable oil and eggs in another bowl.  Slowly mix together wet and dry ingredients and continue to mix/whisk until the waffle batter is smooth.  Follow the instructions for your waffle maker to make the waffles.

Serve about two chicken strips per whole waffle depending on strip size.  Add butter and/or maple syrup if desired.  You can serve this with chopped apples and bananas or apple sauce as a side dish.
