Smores cake: Maybe a summer-inspired treat will bring some warm weather (finally)

Smores are a delicious summer treat. Why not enjoy this summer food anytime with this yummy smores cake recipe.

I was looking through my recipe folders (in addition to my recipe boxes, I have recipe folders, with different recipe ideas and they are alphabetized and categorized. ..one of the many reasons my husband sometimes refers to me as “Monica” as in Geller from friends).  I asked my hubby if he would prefer a rocky road or smores type dessert and he said Rocky road.  So I inquired cake, cookie or brownie.  So he decided on cake.

I  thought if  perhaps if I made smores, maybe such a summer-themed treat could convince nice warm weather to arrive.  I also put out some patio furniture on our deck.   So either nice weather will be on the way or it will rain for a week because I put patio furniture out.

You can use whatever chocolate cake mix you want.  I used Duncan Hines chocolate fudge.  To make buttermilk, mix 1 cup milk and 1 tbs lemon juice or white vinegar and let sit for at least 5 minutes in fridge.

Here’s how to make smores cake

Cake ingredients

  • 1 chocolate cake mix
  • 1/2 cup oil
  • 3 eggs
  • 1 cup buttermilk
  • 1/2 cup Greek yogurt
  • 1 cup chocolate chips

Directions

  • Preheat oven to 350 degrees (325 if using nonstick coated pans)
  • Mix together oil,eggs,Greek yogurt, and buttermilk.
  • Add cake mix, then chocolate chips
  • Spray two cake pans with baking spray
  • Divide dough evenly in each (I used a one cup measuring cup to do this)
  • Bake 15 to 20 minutes or until a toothpick inserted basically comes out clean.
  • Cool completely.

Chocolate buttercream ingredients

  • 1 1/4 cups butter (softened)
  • Heaping half cup cocoa powder
  • 3 tbs Greek yogurt
  • 3 cups powdered sugar
  • 1 tsp vanilla

Directions

  • cream butter.
  • Add cocoa, Greek yogurt and vanilla
  • Slowly blend in powdered sugar, one cup at a time.

At this point you can toast some marshmallows.  I put some on top of a foil lined pie pan and broiled them on high in my oven for a few minutes.

Assembly

  • Place one cake layer, flat side up on a cake plate.
  • Spread a thin layer of buttercream on top
  • Place few toasted marshmallows on top of buttercream.
  • Place other cake layer, flat side down on top of buttercream/marshmallows.  Gently press down.
  • Frost cake with remainder of frosting
  • Top with toasted marshmallows
  • Store in covered container.
