Because it is Halloween and it is also Candy Apple Day we will take a look at how to make the prefect candy apples.

Candy Apples are a fun treat for everyone and anyone.  It is basically an apple with a candy coating on the outside.  The candy coating can be dyed to match any theme that might be taking place as well as any type of ingredient, such as nuts, can be stuck to the outside of the coating to be loved by any taste.

Before you see how to make the perfect candy apples, you first need to make sure you have everything to make them.

The choice of apple is important as well.  You want to make sure that you have an apple that you like as well as one that will hold up well with the candy.  Some top choices for candy apples are Fuji, granny smith, golden delicious and McIntosh.

To make the candy coating you will need:

  • 1/2 cup corn syrup. Use light corn syrup if you want to color your coating.
  • 2 cups sugar. If you use brown sugar your candy coating will take on its darker color. The molasses in the sugar may also make your mixture more susceptible to burning.
  • 3/4 cups water
  • 3/4 tsp food coloring (optional)

Place all ingredients into a sauce pan and heat over medium-high heat.  Dissolve the sugar before it boils to help prevent crystallization.  Bring the mixture to a boil and then lower the heat to medium-low.  Once the mixture begins to boil, don’t stir it as this will cause crystallization.  Use your pastry brush with warm water on the sides of the pot to prevent crystals from forming.  You want the mixture to simmer to about 290 degrees, which is the soft crack stage for candy.  Remove the candy from the heat when it reaches 290.

To coat the apples you have to work quickly before it hardens so make sure you are prepared.  Dip the apples holding the wooden stick until the apple is covered.  If you have additional toppings, make sure to roll or dip the apples in them before the coating hardens.  Place on a drying sheet and finish the rest.  Place apples in the refrigerator to cool.  Once cooled enjoy.
