One city down in the Battle for the South on The Great Food Truck Race. This week the food trucks travel to Pensacola with new marching orders.

Six food trucks are continue the Battle for the South in this season of The Great Food Truck Race. This week’s location is Pensacola. The Sunshine State could either be a sun in the fun or a dreary result. Will teams sink or swim?

According to Food Network, this week’s episode will be jammed packed with cooking. Here’s a sneak peek.

"The remaining six teams arrive at the Naval Air Station Pensacola in Florida to receive their next marching orders. For this challenge, the highest grossing teams from the first leg of the race get to pick teams to work with to feed 50 service members. The teams pair up and have one hour to cook before the hungry service members arrive. The teams with the favorite dish get $200 added to their final till. Next, they hit the streets of Pensacola to sell their dishes. But the teams get a chance at a life vest when Tyler offers immunity to the next round to the team that can make the most profits off a dish featuring the special of the day, a full fresh Red Snapper."

The Red Snapper challenge could give the professional chef teams a big advantage. A delicate fish, the Red Snapper dish could separate the leaders from the rest of the group. I give the advantage to Sothern Frenchie and Braised in the South. Both of these teams should be able to create a winning Red Snapper dish.

With immunity at stake, the teams better work on their pricing and selling skills. Even the slightest mistake could send a food truck home. In the first episode, the teams were relatively close in total sales. The teams need to formulate a plan. Smart purchasing, competitive pricing and delicious food are keys to success.
