What do The Boss, Alex’s Santa Fe, and Chili have in common? They’re headed to Chili’s Grill and Bar. Maybe.


Chili’s Grill and Bar is never one to fall behind on updating their menu with new delicious and innovative meals, but this time, they’re doing it big. Literally.

Last week, we were invited to #ChilisUnderground, an event which introduced three burgers that may or may not join the menu one day. All three are currently being tested in a few markets, and we got to try them out for ourselves at Chili’s Test Kitchen in Dallas, Texas.

Will restaurant guests meet burger heaven and see these three on the menu in the near future? We’re not sure! But, if they make it, we want you all to be prepared and know what to expect. So, burger fans, meet The Boss, Alex’s Santa Fe, and Chili’s Chili…

First up, the burger of all burgers. The monster-size burger. The Boss.

What all is in it? You mean, what isn’t. As you can see from the illustration on the side, the Boss contains bacon, jalapeno sausage, pulled rib meat, brisket, cheddar cheese, a beef patty, tomato, lettuce, ranch, and barbecue sauce! You read that right. Five meats! How many calories is the Boss Burger? A whopping 1,650! That’s over half of the suggested calorie intake for a balanced diet (2,500 for men, and 2,000 for women). The jalapeno sausage stands out the most. It delivers just the right amount of spice to offer a kick of taste.  And even though each bite is a mouthful of different flavors, you’ll be able to enjoy it all.

The Boss Burger is a meal in itself and then some! Think you can take on the Boss? Warning: Things will get deliciously messy! Ask for extra napkins. If this burger pops up on the menu next time you visit, we suggest attempting to conquer it with a friend, at least for your first try. Unless you’re feeling brave, of course.

The Boss Burger may be Chili’s latest pride and joy, their (big) baby, but they’re also testing these two other burgers: Chili’s Chili and, my personal favorite, Alex’s Santa Fe.

Chili’s Chili

If you’re a fan of chili, this is definitely the burger that will steal your heart. It’ll create a beautiful mess, but well worth it.

The Chili’s Chili burger is a throwback. It was on the menu back in 1975 and is made using the same original recipe. Between the buns, you’ll find Chili’s 1975 original chili, shredded cheese and American cheese, sautéed onions, and tortilla strips.

Alex’s Santa Fe

Unlike the Chili’s Chili burger, Alex’s Santa Fe is a brand-new creation! Cooked up by Alex Gomez, a chef who has been with the restaurant for over 20 years, this burger is stuffed with fresh avocado slices, tomato, onion, pickles, cilantro. More importantly, the burger features Alex’s secret spicy sauce. Again, not too spicy, but just right! And the sauce? Mouthwatering! Who can resist a secret sauce?

Want to try one or all of the above? While they’re being tested in various locations, we can’t reveal where. Best of luck! We hope they find their way into the menu very soon for everyone to enjoy.
