Don’t have mom wait till Mother’s Day brunch to eat on Mother’s Day. Cook mom breakfast with this easy Mother’s Day recipe. With a quick trip to the grocery store, kids can get in the kitchen and make mom a delicious treat that she will love.

Kids can get into the kitchen and learn to cook. Mother’s Day breakfast doesn’t have to be a doughnut or a bowl of cereal. With a little oversight, the kids can whip up a delicious recipe. More importantly, that time in the kitchen can turn into a love of food and cooking.

Chef Zipora provided this simple and delicious Mother’s Day recipe that the kids can help bake. While the recipe does include a few ingredients that you might not have at home (like buttermilk and coconut oil), all of these ingredients can be found in a local grocery store.

The reason why I like this recipe is twofold. One, the combination of fresh blueberries and lemon is a perfect Mother’s Day flavor. It is both tart and sweet. Also, using fresh fruit is great choice. Even if you used this recipe off season, blueberries are usually available.

Second, this recipe shows that baking from scratch isn’t hard. Sure, many people go to the baking mix aisle to bake a cake. Those baking mixes are great and are easy. But, baking from scratch can be rewarding, too. With a little planning, anyone can bake from scratch. Plus, if you have the ingredients at home, you can satisfy your cake craving without going to the grocery store.

"The Kelly Family’s Blueberry LoafIngredients – cake:•1 ½ cups all-purpose flour•½ teaspoon salt•1 teaspoon baking powder•1 cup sugar•2 tablespoons lemon peel•¾ cup buttermilk•½ cup coconut oil•2 large eggs•1 tablespoon fresh lemon juice•1 teaspoon vanilla extract•1 cup fresh blueberriesIngredients – lemon glaze:•1 cup powdered sugar•2 tablespoons fresh lemon juiceInstructions•Preheat oven to 350. Spray 8½-inch x 4-inch bread pan with olive oil. In a bowl, mix flour, salt and baking powder.•In another bowl, combine the sugar and lemon peel. Rub together with your fingers until the mixture feels like sand. Then add to the dry ingredients and mix well.•In a second bowl, combine the buttermilk, coconut oil, eggs, lemon juice, and vanilla extract. Mix well and then slowly add to the dry ingredients. Gently fold in the fresh blueberries, and don’t overmix.•Pour the mixture into the bread pan. Bake 65-70 minutes until a toothpick comes out clean. Cool on rack for 15 minutes, then remove the cake from the loaf and continue to cool.•To make the lemon glaze: In a bowl, mix the powdered sugar and lemon juice. Spread onto the cooled blueberry loaf."
