The Great Food Truck Race is back after an unprofitable first week. Can these food trucks turn it around in episode 2?

The Great Food Truck Race heads to Las Vegas in the season’s second episode. Can the glitz and glamour of the Vegas strip bring some much needed profitable luck to these struggling food trucks? Hopefully, last week’s inexperience and lack of profitability was a good learning experience for these teams.

According to the Food Network, this week’s episode synopsis for “Shrimp and Glitz” states:

"Tyler Florence welcomes the teams to Las Vegas and gives them a challenge using one of the most popular items on Vegas menus, shrimp. Each truck must create their own ultimate shrimp dish to sell on Fremont Street, and the team that makes the most money wins a prime parking spot for selling the next day. Then, Tyler and Las Vegas restauranteur Elizabeth Blau visit the teams to offer business and culinary advice, and the teams sell their signature dishes on the streets of Vegas, with the least successful truck being eliminated."

  • A couple things stand out from this synopsis. First, it is very clear that winning challenges will propel a team forward or at least give them a better chance of avoiding elimination. The idea of creating a signature shrimp dish seems like a practical challenge. Using a specific ingredient but also incorporating the food truck’s style doesn’t seem too unreasonable. Hopefully, all the teams create good dishes.

    Second, the synopsis seems to imply that location and selling are concepts that the teams need to leverage. As the first episode showed, these teams don’t necessarily understand the business side to a food truck. With only one team turning a profit, it was a dismissal first week. Understanding how to price food, how to purchase food and how to market to an audience are all important factors for having a successful food truck.
