One of the keys to a great fried dish is knowing temperatures. Oil at the improper temperature will not properly fry a dish. The food can absorb too much oil, which leaves it a greasy disaster. Hopefully, the home cooks have practiced their frying skills before coming to the MasterChef kitchen.

For the elimination challenge, the home cooks will need to understand the balance of flavors. Acid from citrus can make the difference between a good dish and a great dish. Unfortunately, overpowering citrus flavor can make a dish taste bad.

Depending on the direction of this citrus forward dish, the home cooks could show their skills in the kitchen. Hopefully, the home cooks can add some of their creativity in the kitchen. For example, a delicate crudo with a citrus note can be an amazing dish. Just remember to include finishing salt to balance the flavors from start to finish.
