In this week’s The Great Food Truck Race Season 9 episode 4, the food trucks head to Yuma, Arizona. Can some expert prep work get them out of dodge?

As The Great Food Truck Race Season 9 episode 4 heads into another week, the food trucks need to step up their cooking game. While signature dishes seem to be finding an audience, can these teams learn to adapt to their local clientele? Only three trucks will move onto the next destination.

According to the Food Network, this week’s episode synopsis states.

"The trucks roll into Yuma, Arizona, and head to the historic Yuma Territorial Prison; the teams complete a relay challenge involving artichokes and bacon, then the chefs must add an original dish using those ingredients to their food truck menus."

    • The first challenge seems like a great one designed for both Chop Shop and New England Grill. Trucks with professional chefs should excel in this challenge. Anyone who has prepped artichokes knows that the task isn’t easy for a novice cook.

    Truthfully the mise en place style challenge is a great lesson for anyone who wants to be a food truck operator. A food truck takes a team for it to be great. Smart, coordinated food prep is essential to quick, efficient service. If one team member can’t contribute, the whole process can fall apart.

    The second part of the challenge, where the teams use these ingredients, could separate the leaders. For a few food trucks, these ingredients should meld well into their style of cooking. The old saying that everything is better with bacon might not always be the case. The team who can find the right balance of ingredients and their own cooking style should rise to the top.
