    Truthfully the mise en place style challenge is a great lesson for anyone who wants to be a food truck operator. A food truck takes a team for it to be great. Smart, coordinated food prep is essential to quick, efficient service. If one team member can’t contribute, the whole process can fall apart.

    The second part of the challenge, where the teams use these ingredients, could separate the leaders. For a few food trucks, these ingredients should meld well into their style of cooking.
