This week’s Best Baker in America takes on classic French pastries. Will the bakers find excel in keeping the classic yet finding a modern twist?
Best Baker in America will be offering another master class in baking techniques. This week’s episode, “Classic French Pastries Reinvented” will test the bakers with the pastry knowledge. Do two bakers have an edge even before the challenges begin?
According to the Food Network, the Classic French Pastries Reinvented episode features the following:
"Host Scott Conant challenges the six bakers left in the competition to recreate a beloved French classic, the éclair. For the Master Challenge, the competitors have to reimagine a classic French entremets cake using almond as the featured flavor. French pastry chef Florian Bellanger joins judges Jason Smith and Marcela Valladolid to decide which baker is sent home."
Looking at this week’s episode, the Skills Challenge could be more problematic that it seems. Eclairs are popular choices in baking competitions. But, a perfect éclair is far different than just an éclair.
In a way, the bakers need to show more than just a perfect éclair. They need to show innovative flavors without losing the essence of the classic French pastry. The baker who can achieve that balance will earn the win.
For the Master Challenge, the French entremets cake should not be terribly difficult for these bakers. While the bakers might have had some technical issues with the Bombe Alaska, the multi-layered mousse cakes should be achievable.
Using almond at the predominant flavor might be a little tricky. Almond pairs well with vanilla, blood orange and even Asian pears. The baker who can find a way to innovate yet still make almond the star should be safe this week.
In a way, this week’s challenge might sound more difficult that it truly is. While the layered mousse cake will take time and care, it is a dessert that all these bakers should know how to make. If a baker completely messes up this dessert, he doesn’t deserve the title of Best Baker in America.
