Begin by placing a few small bowls of Greek-Style Ripe Olives, seasoned with oregano, lemon and garlic, on your Thanksgiving table for your guests to snack on while waiting for the main course to be served.
On to the main event – the turkey. Drizzling olive oil on the turkey skin will make your roasted turkey evenly browned and crispy. Mark Bittman’s 45 Minute Roast Turkey (8 to 12 pound) uses the “spatchcocking” (cut the backbone and lay the bird out flat before roasting) method which reduces the amount of roasting time needed. Olive oil, Garlic, tarragon and thyme give the turkey fabulous flavor.
Thanksgiving just would not be Thanksgiving without sweet potatoes. Roasted Potatoes and Sweet Potatoes with Olive Oil and Rosemary is a savory treat. Rosemary is the classic herb flavor for Thanksgiving.
Pan Fried Brussel Sprouts is the answer to which fresh green vegetable you will serve to compliment your Thanksgiving meal. Your guests will “ooh and aah” over this flavorful dish. Top your crispy Brussel sprouts with Parmesan cheese and toasted pine nuts.
A light vegetable salad is the perfect compliment to rich Thanksgiving foods. Greek Green Bean Salad is light, crunchy and pops with flavor. Feta cheese, white balsamic vinegar, tomatoes and shallot compliment the fresh green beans in this recipe.
And don’t forget dessert! Along with your pumpkin and mincemeat pies, serve an Orange and Cardamon Spiced, Honey’d Fig, Olive Oil Cake. All of the Fall fruit and spice flavors you love in a tasty tea cake. An unexpected and impressive treat for your friends and family to enjoy.
