Mario Lopez opens a new Mexican restaurant with Chef Eric Greenspan

Now Mario Lopez fans can have a taste of some of his favorite food items from his new Mexican restaurant. Collaborating with famed Chef Eric Greenspan and restaurateur Robert Earl, Mario’s Tortas Lopez will offer authentic Mexican Tortas and bowls. More importantly, these tasty food options will be delivered directly to your door via Grubhub.

According to the restaurant, Mario’s Tortas Lopez will feature six tortas, otherwise a known as a Mexican sandwich. Each menu items can be transformed into cauliflower rice bowls. The menu includes: “Beef Barbacoa, Chorizo & Egg, Grilled Chicken, Pork Carnitas, Chile Relleno, and Vegan Chorizo.” In addition, the menu features select sides and cinnamon sugar dusted churro doughnuts with dulce de leche as a dessert.

Lopez said, “My entire family is very into cooking, and our best moments together are always around a table filled with food.” While Lopez and Greenspan will not be manning the pass, this special offering represents a growing trend in the restaurant industry.

Having Chef Eric Greenspan collaborate on the menu is a bonus for foodies. The celebrated chef might be the king of grilled cheese, but more importantly the accomplished chef has a vast culinary background. Greenspan was a pioneer in the virtual kitchen concept back in 2017.

Mario’s Tortas Lopez joins Robert Earl’s Virtual Dining Concepts portfolio. In simpler terms, the delivery-only menu is available specifically for Grubhub. Local, independent restaurants prepare the food. These types of “ghost kitchens” have been a lifeline for some local restaurants.

Robert Earl, founder of Virtual Dining Concepts, said “We have created a one-of-a-kind, on-demand cuisines with quality ingredients that have Mario’s special touch, and I am so excited for everyone to taste Mario’s Tortas Lopez.”

This newest announcement flows other successful virtual restaurants recently launched by Earl. Guy Fieri has brought his Flavortown Kitchen to many cities across the country. Mariah Carey launched Mariah’s Cookies last year. In many ways, these virtual restaurants fill a gap in the industry.

While the idea of a virtual only concept continues to expand, it will be interesting to see how the concept continues to grow. Although the restaurant industry may not go back to its pre-2020 peak, some people long to eat a meal at a table, not from a takeout container.
