In this recipe, the almond flour pancakes are topped with candied bacon. While this recipe doesn’t address how to make the bacon, that recipe is quite simple. Plus, it can be adapted in many ways. From a touch smoky to a little spicy, that bacon adds more than just another savory note.
Almond Flour Pancakes with Candied Bacon Crumble
Ingredients:
- 1 tablespoon butter or nonstick cooking spray
- 1 cup almond flour
- 1 teaspoon baking powder
- Pinch of salt
- 1 teaspoon vanilla extract
- 2 tablespoons avocado oil
- 3 tablespoons heavy cream
- 1-2 tablespoons of water
- 2 tablespoons Truvia Sweet Complete™ All-Purpose Sweetener
- 2 eggs
Directions:
- In a bowl, put in your Truvia® Sweet Complete™, almond flour, baking powder and a pinch of salt. Mix the dry ingredients.
- Then, add in vanilla extract, avocado oil, heavy cream, eggs and water.
- Stir all of the ingredients together until batter is thick.
- Heat a nonstick skillet and melt butter. Or, spray your cooking spray into your cold pan.
- Heat the pan until oil is bubbling (not smoking) on medium heat.
- Shape batter into pancakes and cook in skillet for 5-7 minutes, or until the bottoms look golden brown.
- Flip and cook the other side until the pancake is cooked all the way through.
- Top with homemade whipped cream and candied bacon!
