Best Baker in America Season 4 episode 2: Strolling the boardwalk

After bourbon infused piecakens, Best Baker in America Season 4 episode 2 heads up the coast for a popular treat. How will these Mid-Atlantic desserts challenge the bakers?

According to Food Network, Best Baker in America Season 4 episode 2, “The Mid-Atlantic” features the following:

"Host Carla Hall gives the nine bakers their Mid-Atlantic-themed master challenge: making their own upscale version of Maryland’s Smith Island cake that incorporates a classic Maryland ingredient, boardwalk popcorn. In the bake-off round, the least successful bakers must make a dessert inspired by the Pennsylvania classic shoofly pie. Carla and judges Gesine Prado and Jason Smith eliminate one baker from the competition."

For people from Maryland, the Smith Island cake is a classic, but for people outside of the area, the cake might be an enigma. Looking at the cake, visually, it could look like a crepe cake with all its thin layers. In some ways, it is a visual marvel.

At its core, the Smith Island cake is a yellow cake comprised of numerous thin layers with fudge in between each layer. In addition, the cake is covered in that rich chocolate icing.

Thinking of this challenge, the interesting part will be how the bakers incorporate the popcorn. The texture will be key to this challenge.

For the bake-off round, the shoofly pie will challenge the bakers. As seen over and over, pies and baking competitions are always a struggle.

Shoofly pie is molasses crumb pie. Some people describe the pie like a crumb cake placed into a pie crust. The bakers who get both the molasses flavor and the pie crust should remain in the competition.

Give that it is Best Baker in America Season 4 episode 2, it is too early to predict top bakers. At this point, anyone can have a great or poor bake. It remains to be seen what these bakers create.
