Festival of the Arts food has Disney chefs serving a taste of a gastropub

As EPCOT kicks off its first event of the year, the Festival of the Arts food showcased innovative creativity in the Disney chefs’ dishes. While the visual arts captivate the eyes and the Disney on Broadway performances have everyone tapping their feet, the food showcased a tempting blend of talent and innovation. With a few of the dishes, the tastes are reminiscent of a great gastropub.

Over the years, Disney food, especially EPCOT festival food, looks to further a conversation beyond the traditional theme park fare. Although many people take the opportunity to feast on global flavors and ingredients throughout World Showcase, it is more than just pretty plates and traditional ingredients during the various festivals. The Disney chefs want to test what is possible, both in the kitchen and in people’s perceptions.

When it comes to Festival of the Arts food, the plates tend to focus on the art of the culinary world. While some people might not appreciate the intricate plating techniques, which can cause longer wait times, these dishes epitomize the attention to detail a great dish offers. From the visual to the texture, each and every component is carefully chosen. Whether eaten in a perfectly composed bite or parsed piece by piece, it is a flavor adventure that captivates the foodie spirit.

During a recent conversation with Disney chefs, some of the new dishes for the 2022 International Festival of the Arts were discussed. While much is said about the colorful cuisine as well as the Colombia-inspired dishes, other new food options represented not just great flavor but stood testament to what can be done in the Disney marketplaces.

Specifically looking at the Bone Marrow dish, Disney chefs mentioned that this type of dish is something that they would not have considered in years prior. Now, they have the means and opportunity to bring that idea to life.

The Roasted Bone Marrow with Onion Marmalade, Pickled Mushrooms, Mache Lettuce and Bone Marrow Snow is a perfect example a gastropub style dish but served in a Disney way. Beyond capturing the “landscape” theme of the marketplace, the flavor is impeccable, unctuous, and worthy of any highly rated restaurant. It deserves a moment to savor.

The bone marrow dish isn’t the only gastropub influence dish that is part of the Festival of the Arts food offerings. The Blood Orange-braised Beer Carpaccio is a symphony of flavors. Earthy, bright, hearty, the flavors have you excited to eat more vegetables.

The Cast Iron roasted P.E.I. Mussels is another great example. An ample serving of mussels, the dish has simplicity but never lacks flavor. But, a hunk of French bread instead of some crostini would make this dish even more satisfying.

Overall, the Festival of the Arts food might be even more exciting than the offerings at the annual Food and Wine event. For the food adventurous who long to discover the culinary arts, these marketplaces are a must visit.

The EPCOT International Festival of the Arts 2022 runs now through February 21, 2022. Guests are required to make theme park reservations and need to follow health and safety protocols while at Disney Parks.
