Padma Lakshmi recommends this Lassi Pop Recipe for Diwali
During the Diwali celebration, many tables are filled with sweet treats. The Festival of Lights has the Hindu community joining together to bring the sentiments of joy, prosperity and happiness to the table. This year, Padma Lakshmi has created a delightful treat for the occasion. This Lassi Pop Recipe will be a popular frozen treat for all ages.
While there are many celebratory dishes served during Diwali, the holiday is often focused on traditional flavors and even family recipes. Lassi is a popular Indian beverage. Often made with yogurt or buttermilk, the chilled drink can feature a variety of flavors.
From her social media accounts to her television shows, Lakshmi has introduced people to recipes rich in culture and heritage. While there can be a tie that connects communities, it is the flavor and the story that brings people to the table.
As a board advisor for DAH!, Lakshmi encourages many people to discover the “Dah!licious” flavor of the Indian-Style drinkable yogurt. Given that the beverage is low in sugar, has billions of probiotics, and is packed with protein, it is an easy choice for healthy eating conscious consumers.
How do you make Padma Lakshmi’s Lassi Pop Recipe?
In this simple Lassi Pop Recipe, Lakshmi uses the DAH! Vanilla and Cardamon Lassi flavor. The cardamon brings a robust aroma to the eating experience. Given that this ingredient is balanced with the vanilla, the overall flavor is quite enjoyable without being too sweet.
For this particular recipe, Lakshmi creates a play on the traditional dish, Malai Kulfi. An Indian dessert, the flavors feature saffron, cardamon and pistachios. In this frozen recipe, the pop adds a touch of juicy sweetness from the strawberries. While the nuts and berries could be swapped for another choice, it is worth trying the original recipe first.
Here’s how to make the Lassi Pop Recipe from Padma Lakshmi.
DAH! Lassi Pop Recipe: Makes (10) 3oz. pops
Ingredients:
- (1) 32oz. Bottle of DAH! Vanilla with Cardamom Lassi
- A pinch of saffron threads
- 1/4 cup shelled pistachios, unsalted. Optional: swap for another nut of your choice, such as cashews, almonds, hazelnuts, etc.
- 3/4 cup finely chopped strawberries. Optional: swap for another berry of your choice, such as blueberries, raspberries, blackberries, etc.
- Special equipment:
- Popsicle molds (we used a popsicle mold with (10) 3oz. wells)
- Mortar & Pestle or molcajete
Directions:
- Gently grind the saffron threads in a small mortar and pestle. Pour the saffron powder into the lassi bottle and shake to combine. The lassi will take on a beautiful pale yellow hue.
- In a large mortar and pestle or molcajete, coarsely crush the pistachios into small pieces (you could also coarsely chop the pistachios on a cutting board).
- Using a small espresso spoon, add crushed pistachios to each well of your popsicle mold and repeat with the chopped strawberries.
- Slowly pour the lassi into each well, place the popsicle sticks in each center, and transfer to the freezer. Let it freeze overnight.
- Enjoy the next day- if you find the popsicles won’t release directly from the mold, you can run the mold under hot water for a few seconds to loosen it from the well.
