Whether it is Valentine’s Day, a romantic evening, or just because, wine and chocolate are always a delicious combination. Although personal preferences should always come into play, pushing the boundaries a little can unshackle expectations.

Recently, The Prisoner Wine Company partnered with Kollar Chocolates on a special SALDO & Chocolate Tasting Experience at its winery. While many people would love to indulge in the $75 a person special event, a trip to California may not be in the cards for everyone. Luckily, a few of the pairing suggestions have been shared so that anyone can recreate this flavor experience at home.

Part of the class invites guests to appreciate how the acid and tannins in wine can be balanced with the chocolates. Without having to be an expert sommelier, anyone can learn the concepts and experiment with the chocolate and wine combinations.

One of the most unique flavor combinations is the SALDO Shiraz and the Strawberry Fizz Bark with Poprocks from Kollar Chocolates. The strawberry in the chocolate is highlighted by the purple fruit of the wine. While that combination is delightful, the Poprocks softens the tannins of the wine. Although there are bursts of flavor, it is a different food and beverage experience that has to be tried to fully appreciate.

For a slightly more earthy combinations, the SALDO Zinfandel is paired with the Matcha Yuzu White Chocolate Truffles from Kollar Chocolates. The herbal matcha with zesty citrus yuzu and sweet white chocolate contrasts the warm baking spices in the wine. While the black licorice and slight black pepper bring a bold note, the wine and chocolate pairing is one that will have people going back for a second or third taste to appreciate.

While red wine and chocolate is often a popular choice, the SALDO Chenin Blanc is paired with the Poppy Seed and Saffron White Bark from Kollar Chocolates. The slight savory chocolate plays off the honey crisp apple and pineapple in the white wine. This chocolate and wine pairing could spark a conversation that could unlock a variety of other flavor combinations.
