Here’s how to make Unicorn Croissant Breakfast Trifle

Ingredients

  • 16 Croissants
  • 1 cup fruit jam
  • 3 pint fresh raspberry

Vanilla Custard

  • 3 cups whole milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 5 egg yolks, beaten
  • 1 tsp vanilla extract
  • pinch salt

Greek Yogurt Cream:

  • 1.5 cups heavy cream
  • 1 cup Greek yogurt
  • 2 tbsp confectioner’s sugar

Unicorn Syrup

  • 1.5 cups 14 Hands Unicorn Bubbles
  • ¼ cup Elderflower Liqueur

Directions

  • Make the custard: in a saucepan, combine milk, sugar, and cornstarch, and heat until simmering and slightly thickened. Remove from heat. Add a small amount of the hot milk mixture to the beaten egg yolks, whisk to combine, then add all back into the saucepan. Cook over medium heat until thick and bubbly, stirring constantly. Remove from heat, add vanilla and salt, and stir until combined. Let cool completely
  • Make the unicorn syrup: Combine Unicorn Bubbles and elderflower liqueur in a saucepan. Simmer over medium heat until reduced by ⅓. Let cool
  • Make the Greek yogurt cream: whip heavy cream until stiff peaks form. Fold in Greek yogurt and confectioner’s sugar
  • Prepare the fruit jam croissants: slice croissants in half horizontally, spread the bottom half with 1 tablespoon of jam, and replace the top half to make a sandwich. Slice each sandwich in half lengthwise
  • Assemble the trifle: in a trifle bowl or glass bowl, layer one third of the fruit jam croissants halves, fitting them snugly. Drizzle with Unicorn syrup. Add a layer of fresh raspberries and then a layer of custard. Repeat 2 more times. Top the trifle with a crown of Greek yogurt cream. Garnish with edible flowers and fresh raspberries

Looking at this recipe, it is relatively easy, but it makes a big impression on the table. While this dessert is meant to be served in one big serving dish, it could be made into individual servings. The key is to make sure that each dish is similar.

Also, the recipe can be modified in a few ways for the less confident cook. For example, if making that custard is too much, simply use a different premade filling. It is basically a pudding. A store bought option can be totally acceptable.

Lastly, remember to serve the Unicorn Daydream cocktail. The food and beverage pairing is definitely a wonderful way to toast to the good life.
