Speaking to al fresco dining, Rachael said, “eating outside is just fun. It is colorful and you feel part of the world. Whether it is your backyard or an incredible vista, it is kind of an adventure. It can make a difference in how your day can feel.”

Rachael said, “most things that people buy in restaurants, they could make faster by themselves, in their own home with just a few skill sets. You do not have to go to culinary school. I never went. Food is not a mystery. If you make it with love, nothing else matters.”

For Rachael, she believes that “cooking from scratch made me strong and resilient as a young person starting out.” Whether it is adapting a budget, understanding seasonality, or seeing beyond the original plan, affordable, delicious food solutions can always be found.
