Mornings can be busy. While the brewing coffee might help open those bleary eyes, the reality is that a hearty, flavorful bite might be the best way to start the day. With this Sausage Muffin Frittata recipe from Chef Andre Rush and Bob Evans Farms, the food on the plate not only satisfies that hunger but also can be a well-balanced bite.

Recently, Chef Andre Rush partnered with Bob Evans Farms. The collaboration was in support of the United Service Organizations and its efforts to support the well-being of military members. While the special events brought military members into the kitchen with Chef Rush, the ideas extend to everyone’s table.

During a conversation with Chef Rush, he explained how he combined Bob Evans Farms ingredients with other items to create recipes that were not only great tasting but also good for the body and mind. Chef Rush believes that choosing particular ingredients to support overall health, not just healthy eating, it important for everyone.

Understanding how food impacts how people feel is important. While the concept has been told time and again, it is more than just another serving of food knowledge. That idea of balanced eating needs to become habit. It does not mean that certain foods are completely removed from the conversation. Instead, it is finding ways to bring favorite flavors to the table in ways that check all the boxes.

One breakfast idea is his Sausage Muffin Frittata Recipe. While the muffin bites are hearty, they can be an easy, convenient breakfast option. For example, prepping enough muffins for the week can ensure that there is a grab-and-go meal at the ready.

More importantly, the sausage muffin frittata recipe has a good amount of nutrients. Vegetables mixed with eggs and sausage hits several of the food groups.

Also, everyone can customize this dish. From a dash of hot sauce to salsa, there are plenty of ways to serve this dish.

Here’s how to make Chef Andre Rush’s Sausage Muffin Frittata recipe:

  • 1 tablespoon olive oil
  • 1⁄4 cup red pepper, diced
  • 1⁄4 cup green pepper, diced
  • 1⁄2 cup yellow onion, diced
  • 16 ounces Bob Evans Original Sausage Roll
  • 1⁄4 cup tomatoes, diced
  • 1⁄4 cup spinach, chopped
  • 3⁄4 cup cheddar cheese, shredded
  • 7 large eggs or one 16-ounce carton Bob Evans Liquid Egg Whites
  • 1⁄4 cup milk/heavy cream or half and half
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper

1. Preheat oven to 400° F.

2. In a large skillet, heat olive oil on medium and add peppers and onion. Cook for a few minutes until transparent, then add Bob Evans sausage and cook thoroughly until there is no pink remaining. Next, add tomatoes and cook for one to two more minutes. Stir in chopped spinach and set aside once done.

3. Line a muffin pan with 12 individual parchment muffin liners. NOTE: If you don’t have parchment muffin liners, you can spray the cups with olive oil and put the mixture directly in the muffin cups.

4. Arrange the Bob Evans ground sausage mixture in the muffin cups. Add cheese on top.

5. In a bowl, mix together the eggs, milk, salt and pepper, then pour the egg mixture into the muffin cups over the sausage and cheese, making sure not to fill it all the way to the top as it may overflow.

6. Bake for 15 to 20 minutes, until the eggs are firm. Take out and enjoy!
