Deviled eggs get a sweet makeover showing they are more than just an appetizer
An egg is an incredible, versatile ingredient. From a staple in baking recipes to the simple scramble for a meal, that carton of eggs is a constant in the refrigerator. As egg flights surge in popularity, it is time to take that classic deviled egg in a sweet direction. Hungry for a taste of dessert deviled eggs?
Food trends often surprise people. Global flavors, swicy, and a myriad of other descriptions fill menus, recipe cards, and social feeds. Even though those classic, nostalgic dishes will always be a favorite, people want a little twist, update, or innovation.
Deviled eggs are one of those staple recipes. Often associated with the leftover Easter eggs, the simple dish has become more than egg whites filled with a yolky center.
Savory deviled eggs have taken on bold and elevated flavors. It is more than that unctuous piece of bacon beckoning people to eat it. Topping as bougie as caviar or as simple as fresh herbs change the simple dish into an eating experience.
Recently, the American Egg Board shared dessert deviled eggs recipes. The idea is meant to show that classic dish in a new light.
Recently, I spoke with Nelson Serrano-Bahri, Chef and Director of Innovation at the American Egg Board. Via an email conversation, Serrano-Bahri explained this food trend and offered some insight on how to apply the concept.
Cristine Struble: While eggs are often a staple ingredient in dessert recipes, how did the idea of dessert deviled eggs come to be?
Nelson Serrano-Bahri : "2024 has really emphasized that deviled eggs aren’t just an appetizer with a filling anymore—they're the perfect vessel for sauces and toppings, including sweet flavors. Egg flights on TikTok have drawn over 95 million views this year, as people enjoy making bite-sized deviled eggs with ingredients they have at home more than ever."
"This is where dessert eggs can come to play—think of deviled eggs as your ultimate canvas for enjoying your favorite desserts bite-sized!"
"Dessert deviled eggs emerged from the desire to push the boundaries of classic flavors of deviled eggs and showcase the egg’s adaptability and versatility. Even though deviled eggs are traditionally savory, they really do offer a unique canvas for so much more. Reimagining them as a dessert allows for playful, unexpected pairings that show off the egg’s versatility beyond breakfast or savory appetizers."
CS: Are there certain flavors that work better in this concept? In contrast, are there flavors that should be avoided?
"Flavors that balance sweetness and richness work best for dessert deviled eggs, like chocolate, caramel, and vanilla, or fruity notes like raspberry or lemon. I recommend avoiding flavors that are overly acidic or strongly savory (like vinegar or umami-rich ingredients) as they tend to clash with sweeter flavors."
"For specific fillings and recipes, consider creating dessert deviled eggs inspired by dishes that are egg-forward like mousses and curds. Because egg whites are such a blank canvas, the filling really brings dessert deviled eggs together."
"Try making Tiramisu Deviled Eggs by combining mascarpone with egg yolks, vanilla extract and sugar for the deviled egg filling. For the topping, pulverize lady fingers and mix with a teaspoon of instant espresso. You can also add a teaspoon of your favorite rum or liquor to the yolk mixture, but make sure it doesn’t get too watery for your filling consistency. Chocolate Deviled Eggs is also a fun and easy dessert deviled egg option, or a Crème Brûlée Deviled Egg made with heavy cream, sugar and egg yolks."
CS: Since the egg white is used as the base, do you have to consider textures? Should there be something both smooth and crunch?
"Since the egg white is smooth, introducing contrasting textures is essential for a balanced sweet bite. A creamy or whipped filling works beautifully, complemented by crunchy toppings like crushed nuts, caramelized sugar shards, or even sprinkles like these Chocolate Deviled Eggs. This contrast enhances the dessert experience and makes each bite of the deviled egg more interesting."
CS: Since this concept might have some people doing a double take, how would you entice them to try the food? Do you think that this concept shows the versatility of the deviled egg idea?
"For those who may be hesitant on trying a dessert deviled egg, focusing on the familiar dessert flavors in this unexpected format of the deviled egg is key. Visual appeal also plays a big role—a beautifully plated dessert deviled egg garnished with fresh fruit or a drizzle of chocolate sauce can capture attention and spark curiosity. This concept also demonstrates just how versatile deviled eggs can be, proving that with a little creativity, they can work in any course!"
The versatility of deviled eggs is most certainly on display. Additionally, the American Egg Board wants to remind everyone about food safety. According to the organizations, “eggs should always be cooked to 160° F. Do not consume hard-boiled eggs if left unrefrigerated for longer than 2 hours.”
