While all those splashy moments have value, diners crave food that satisfies beyond the show. Classic dishes push away all the noise. When the ingredients evoke a memory, capture a feeling, or otherwise feed the spirit, diners will always be hungry for more.

Set to open at Planet Hollywood Resort and Casino, Caramella celebrates old world sentimentality with impeccable deliciousness. Taking over the Koi Restaurant and Lounge space, which is near the Criss Angel Theater, the Tao Group Hospitality wants to transport guests to 1970s Italy. While the décor will be a touch nostalgic, the flavors will be original interpretations on regional Italian favorites.

Although the menu has not been released, the culinary team shared that dishes will include pastas as well as prime steaks and chops served Tuscan-style. Sides will be served a la carte.

Adding a classic Italian style restaurant is smart for the property. It is a taste of the familiar yet the setting embraces the extravagance that people expect from Las Vegas.

According to Ralph Scamardella, Tao Group Hospitality’s Chief Culinary Officer, “I think classic Italian dishes are always in demand and are a staple on the dinner table, be that at home or dining out. At Caramella, we are offering fresh takes on those tried-and-true familiar favorites.”

Given Tao Group Hospitality’s success at Stanton Social Prime as well as OMNIA Nightclub, the company knows what Las Vegas wants and will deliver it. Caramella will soon become the must have reservation on the Strip.

Caramella is set to open in the winter of 2024.
