After presenting their signature dishes in the first episode of Hell’s Kitchen Head Chefs Only, the red and blue teams know that the competition will be fierce. Every person has the experience to handle the pressure of cooking on the line. While these chefs are accustomed to leading the kitchen brigade, it is time to check those egos at the pass.

Many Hell’s Kitchen chefs have learned that cooking in this environment is far different than their own restaurants. From new dishes to the constant feedback from Gordon Ramsay, even the best chef can make a mistake.

The idea that a Head Chef would “stab” the chicken to check for doneness is mind boggling. Even the newbie or novice cook appreciates that cutting, stabbing, or otherwise poking a chicken, or any protein, causes the food to be dry.

There is nothing worse than seeing food sitting on a plate with all the juices puddled around it. The concept applies during cooking, too. Why leave all the flavor in the pan when it should be in that diner’s first bite.

Chef Hannah’s novice mistake is befuddling. She knows better than to poke chicken while its cooking. She could use her finger to test doneness. But, the pressure in the moment can cause any chef to make silly errors.

Will Chef Hannah and the Red Team be able to recover? They did win the Signature Dish Challenge in episode 1. They are a strong team. These Head Chefs should be able to recover quickly.

The first dinner service focuses on a flambe challenge. While this concept seems to play into the initial moment where Chef Ramsay lit the restaurant sign on fire, a flambe dish is far from easy. In addition to burning off the alcohol, no one wants a spark to ignite a different fire. Let’s hope that any tableside service has everyone keeping their hair away from the open flame.
