Starbucks has always been willing to push the coffee conversation forward. Even though some people gravitate towards the simplicity of a well-brewed coffee, others wanted layered drinks, creative flavor combinations, and unlikely ingredients. Finding the balance between the need to innovate yet not alienate is key to Starbucks continuing to be relevant.
To start 2025, Starbucks added Cortado to its menu. The Spanish coffee is a delicate balance between robust espresso and steamed milk. While the milk is said to “cut” the coffee, it is more than simply diluting the flavor. It is about creating a creamy, luscious texture that never overshadows the underlying coffee flavor.
For the Starbucks version, the foundation is the Blonde Espresso. Slightly less bitter than other offerings, the three ristretto shots can be served with milk or a Brown Sugar Oatmilk Cortado is a non-dairy version available. Both offerings are served hot, in a 8 oz serving only.
As Ricky Gonzalez, who works on the beverage development team said, “Espresso is the heart and soul of Starbucks. Our goal was to create a new way for customers to experience espresso from us.”
Going back to a classic beverage is a smart idea for Starbucks. In a complicated, over the top world where food has almost become too intricate, the classic espresso beverage is a reminder to step back and taste ingredients for what they are. It can be the reset that people crave.
What other new menu items join the Starbucks Cortado offering?
In addition to the Starbucks Cortado, Starbucks is bringing the Pistachio Latte and Pistachio Cream Cold Brew. This customer favorite offers a nutty flavor but with an underlying sweetness. The buttery brown topping made these beverages unique and craveable.
The Pistachio Latte is available hot, iced, or as a Frappuccino. The Cold Brew is a little more layered option with the pistachio cream cold foam, vanilla syrup, and salted brown butter sprinkles. The pistachio beverages are available for a limited time.
Since many drinkers prefer sweeter flavors, Starbucks has revamped its matcha offerings. The matcha powder is now sweetened with a classic syrup. This change allows guests more customization with their beverages.
Lastly, Starbucks is adding to its food menu. The Spicy Falafel Pocket is hearty option that feels more like a lunch or dinner choice. The permanent menu item helps to keep the restaurant brand an all-day stop versus just a morning stop.
