After smashing successful dinner service, Hell’s Kitchen Season 19 episode 7 looks to keep that momentum going. Is one team dealt a perfect hand in this week’s episode?

According to FOX, Hell’s Kitchen Season 19 episode 7, “Pair of Aces” features the following:

"The teams compete in a challenge to see who can identify the proteins in three Surf & Turf dishes the fastest. Later at dinner service, one team has the best dinner service in Hell’s Kitchen history, while the other team falls flat in the all-new “A Pair Of Aces” episode of HELL’S KITCHEN airing Thursday, Feb. 18 (8:00-9:00 PM ET/PT) on FOX."

For the team challenge, this challenge will surely have some twists and turns. Although not as difficult as a blind taste challenge, there will be a few tricks hidden under that cloche.

Still, these chefs should be able to identify most proteins. Given that the dishes should be relatively straightforward, the palate test gives insight into a chef’s cooking confidence. It isn’t that chefs can’t identify crab from lobster but can they do it under pressure.

More importantly, this challenge is another box to check off on Gordon Ramsay’s list. Whoever earns the title needs to have all the attributes. A good palate is necessary for any successful chef.

As for the dinner service, it is really coming down to communication. The team that keeps the food moving off the line will keep the group intact. Given the past successes, the teams cannot go backward. Hopefully, everyone keeps the momentum going.

While there are still many challenges left in this Hell’s Kitchen season, a few favorites are emerging. Even after Amber’s meltdown, she is a very talented chef. Also, Declan has proven that he can cook, although no one should call him Big D.

On the Red Team, Mary Lou has proven herself on the line. While not always perfect, she recovers well. Syann had a strong start, but it will be curious to see if she can find her previous winning ways.
