Located inside the Castillo de San Marcos Fort, the Art Bar brings a creative spin to spring cocktails. While the artist might paint with his brush, these cocktails are part whimsy and part expert mixology. Whether it is an aroma from the smoke bubble or the flower emerging from the ice cube, these cocktails are more than just a cursory pour in a glass. Even though you might prefer to enjoy the kaleidoscope of offerings, it might be best to enjoy one sip of the painter’s palate at a time.

The cocktails and mocktails offered at the Art Bar offer a full spectrum of flavors and colors. Some are bright and herbaceous while others are sweet and spicy. In some ways, the creativity in the glass could encourage a sip that isn’t necessarily the norm.

For example, the Bourbon in Bloom is a bursting with berries. The combination of strawberries, raspberries and a touch of mint is both sweet and refreshing. While the sparkling wine floater adds effervescence, the edible flower in the ice cube is a special nod to Spring.

One of the most impressive cocktails is the Secret Garden. While the colorful pea flower extract adds to the colorful aspect, the smoked flavor bubble reveals the treasure inside the couple glass. The contrasting flavors of grapefruit juice and lavender honey syrup make it feel like a lovely summer day. Still, that big reveal of the edible flowers under the smoke bubble is a moment to remember.

For a bold flavor, the Spring Fever cocktail combines rosemary, jalapeno and cucumbers to offer a refreshing sip. The touch of heat with the nod to a slight sweetness makes this cocktail a surprising sip.

While the cocktails are delightful, the mocktails are equally impressive. Since Peeps are always a springtime favorite, the For the Peeps mocktail blends lemon lime soda, watermelon and mint for an invigorating sip.

Since being an artist means a little experimentation, the Over the Rainbow mocktail allows you to create the perfect beverage. Guests are given three jars and allowed to create their perfect pour over the green apple boba. From traditional color progression to a figment of your imagination, the path is yours to take.

The Art Bar has a wide array of colorful, flavorful and innovative beverages. The special offering is part of the Spring celebration at Gaylord Palms.
