While this episode’s challenge might seem straightforward, the reality is that street food might be more nuanced than that perfectly plated, elegant restaurant style dish. Instead of hiding behind the stunning visual, the flavor needs to pack a big punch.

While Gordon Ramsay might call him the Savant of Street Food, Choi’s success is more than just the iconic Kogi Korean-Mexican food truck. Although anyone would happily devour those impeccable tacos, Choi pushes the food conversation forward. It is about showcasing flavors, ingredients and culture in a way that everyone can appreciate. Whether it is a familiar vehicle to push the food boundaries or making food approachable to all, Choi is never afraid to take on the big subjects.
For this episode, it will be interesting to see how the home cooks approach the challenge. Although some people might want to put their own spin on the taco, it might be a better choice to try a different avenue.
