Here’s how to make Jalapeno Dairy-Free Mac n Cheese from Radhi Devlukia-Shetty.
Ingredients
- 2 cups dried elbow pasta
- 3 tbsp vegan block butter
- 3 tbsp plain or gf flour
- 3 cups Califia Farms Organic Almondmilk
- 2 cups grated vegan cheddar cheese
- 1 tbsp english mustard
- 4 fresh jalapenos chopped finely
- ¼ cup pickled jalapenos chopped
- 1 tsp salt
- ½ tsp pepper
- ¼ tsp asafoetida or garlic powder
Topping
- ¼ cup grated vegan cheese
- ¼ cup breadcrumbs
- 1 tbsp mixed herbs
- Chili oil (optional)
Directions:
- Boil pasta in large pot, according to box instructions, and preheat oven to 400f
- In a pan, add the butter and let it melt
- Add in the chopped fresh jalapenos and asafoetida and saute for 2-3 minutes
- Add in the plain flour for the roux, mix on low heat till smooth the flour will disappear, and it will form a thick paste
- Add in the Califia Farms Organic Almondmilk and whisk. There should be no lumps
- Leave on medium heat and you will see the sauce beginning to thicken
- Add in the mustard, cheese pickled jalapenos salt and pepper and heat till the cheese melts and forms a thick sauce
- Strain pasta and then mix into sauce
- Pour into a baking dish or casserole dish and top with cheese then breadcrumbs and mixed herbs
- Drizzle a little chili oil then put on the middle shelf to bake
- Bake till crisp and golden and cheese has melted, about 15 minutes
