Here’s how to make Jalapeno Dairy-Free Mac n Cheese from Radhi Devlukia-Shetty.

Ingredients

  • 2 cups dried elbow pasta
  • 3 tbsp vegan block butter
  • 3 tbsp plain or gf flour
  • 3 cups Califia Farms Organic Almondmilk
  • 2 cups grated vegan cheddar cheese
  • 1 tbsp english mustard
  • 4 fresh jalapenos chopped finely
  • ¼ cup pickled jalapenos chopped
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp asafoetida or garlic powder

Topping

  • ¼ cup grated vegan cheese
  • ¼ cup breadcrumbs
  • 1 tbsp mixed herbs
  • Chili oil (optional)

Directions:

  • Boil pasta in large pot, according to box instructions, and preheat oven to 400f
  • In a pan, add the butter and let it melt
  • Add in the chopped fresh jalapenos and asafoetida and saute for 2-3 minutes
  • Add in the plain flour for the roux, mix on low heat till smooth the flour will disappear, and it will form a thick paste
  • Add in the Califia Farms Organic Almondmilk and whisk. There should be no lumps
  • Leave on medium heat and you will see the sauce beginning to thicken
  • Add in the mustard, cheese pickled jalapenos salt and pepper and heat till the cheese melts and forms a thick sauce
  • Strain pasta and then mix into sauce
  • Pour into a baking dish or casserole dish and top with cheese then breadcrumbs and mixed herbs
  • Drizzle a little chili oil then put on the middle shelf to bake
  • Bake till crisp and golden and cheese has melted, about 15 minutes
