Holland America Line welcomes Masaharu Morimoto as its Fresh Fish Ambassador
While the ports of call offer a bounty of fresh, local ingredients, Holland America Line appreciates that the cruise ship dining room can showcase that food as well. With its new Fresh Fish Ambassador, Masaharu Morimoto, the celebrated chef’s signature style will help craft a story at every dining experience.

People want choices that reflect their personal preferences. Fresh, local, and sustainably sourced are all descriptions that are just as important as culinary creativity and scrumptious flavors.
Holland America Line has served “100% fresh, certified sustainable Alaska seafood on board its ships in Alaska,” now the cruise brand is expanding that concept throughout its fleet. With the help of Chef Morimoto, guests can “Savor My Catch” throughout their getaway.
Speaking to the dining evolution, Gus Antorcha, president, Holland America Line commented, “The ability to source and prepare so many types of fish globally is a testament to our outstanding culinary team. From yellowtail snapper in the Caribbean to barramundi in Australia, the variety of fresh fish we offer is unrivaled in the cruise industry.”
To highlight the program, Chef Morimoto’s role of Fresh Fish Ambassador will include some signature dishes as well as a pop-up restaurant starting in 2024. The specialty dining options will be available at various dining venues.
Given Chef Morimoto’s attention to craft and appreciation for the freshest ingredients, guests will be thrilled to get a taste of these offerings. Even though each dish will have the chef’s signature flare, the options will be approach to a wide audience. Some examples coming to the main Dining Room are Fresh Black Cod Yuzu, Morimoto Epice Lobster Tails and Fresh Halibut XO.
Rolling out across the fleet, the Morimoto by Sea Pop-Up will be offered at least once during the itinerary. Available for an additional charge, the multi-course meal puts the fresh fish front and center. From Chef Morimoto’s iconic Tuna Pizza to a crispy whole fish, guests will have difficulty picking just one dish to enjoy per course.
By adding this dining choice to its fleet, Holland America Line understands that the guest does not want to compromise when they step aboard.
