Looking back at last week’s first dinner service, the result was not good for either the Red or the Blue team. The amount of raw proteins presented to the pass is something that would be expected from novice chefs. For all these chefs, the simple mistakes should not be happening. It made sense that both kitchens were shut down.
In addition, neither kitchen seemed to have a leader emerge within the teams. Bickering took over and the cracks showed. Hopefully, one or two chefs can step up and guide the brigade to a successful service.
