While it might be a little late to get a ticket to the big event, these bourbon inspired brunch dishes bring some big, bold flavor to anyone’s watching party.
This year, Chef Robert Lopez returned to his helm as Senior Executive Chef for Levy and Head Chef at Churchill Downs. While his menu, which will be featured throughout the venue, balances traditional recipes and a nod to local ingredients, the Club SI menu is a little bolder.
In partnership with culinary content creator Joshua Weissman, two bourbon inspired brunch dishes have everyone taking notice. Whether paired with that classic Mint Julep or enjoyed with a Woodford Spire, the two food items capture the grandeur of the moment and a taste of food trends.
One dish, Kentucky Bourbon Hot Honey Pork Belly, is a stunning take on the swicy trend. While people have made all types of glazed, candied, or flavored bacon, swicy pork belly takes that unctuous flavor to the next level.
Weissman’s recipe uses a Kentucky-aged hot honey sauce and is finished with smoked paprika and cayenne. For anyone considering this recipe at home, the two spices can be swapped with other options, too. A chipotle spice would add some smoky notes to the dish. Or, a hint of soy or even gochujang would add a nice umami note.

The other dish that Weissman highlighted was a riff on a French Toast. The Challah bread was soaked in a custard full of Kentucky bourbon. Then, it is combined with candied pecans. The dish was topped was mint-infused whipped cream and dark chocolate shavings.
This dish might be labeled a French Toast, but it works as a dessert, too. It is a great substitute for a bread pudding.
