From sit down restaurants to quick service options, there is an option that satisfies every craving and thirst. According to Jens Dahlmann, VP and Executive Chef of Universal Orlando Culinary Options, the newest theme park evolves the offerings to incorporate an evolution of a key concept.
Ahead of Epic Universe’s triumphant opening, the week leading up to the celebratory moment had the culinary team polishing every last detail. As media and special guests sampled the various dishes and beverages, Chef Jens Dahlmann spoke to me about a new concept that Universal Orlando has embraced with its culinary direction.
Over the past several years, the immersive storytelling through its food and beverages has been clear. From the stunning visuals to the unique flavors, the connection to the stories, characters, and events have been clear. Whether it was Halloween Horror Nights or a Wicked pop-up, the reality is that food on the plate is vital to creating memorable moments for guests.
Chef Jens revealed a new take with Epic Universe’s culinary offerings. Specifically, he said, “food amplifies the guest experience. We have always talked about the immersive storytelling. Now, we are shifting a little bit to amplifying the storytelling.”
That amplification is clear in several of the lands. Chef Jens believes that the Wizarding World of Harry Potter is a key example. The magic is epic, but it is more than wands and sweet flavors.
He referenced the French brasserie with its authentic flavors, ambiance, and presentation. Guests instantly feel transported to that Parisian restaurant. Whether it is sitting at a table with chairs facing the street or tucked away in a corner slowly savoring that crepe, people will suspend belief that they are in a theme park within the City Beautiful.
Chef Jens believes that Blue Dragon Pan-Asian restaurant is another example where authenticity helps to amplify the storytelling. From a boldly spiced Dan Dan noodle to a comforting bowl of ramen, people appreciate the attention to detail.
While his culinary team has focused on amplifying that authentic storytelling at every dining spot, Chef Jens brings a taste of the unexpected, which he believes is vital to the guest experience. He explained, “our guests are more into travel, more knowledgeable about food. For me, what makes food memorable is having an unexpected element.”
In his recipes, he creates those unexpected moments with textures. From a crunchy layer in a chocolate dessert to an ingredient that bursts in the mouth to a change in texture, those moments are something that is normally not seen. When a chef can excite, surprise, and tempt a guest with food, the culinary team has succeeded in creating an out of this world food and beverage experience.
