While diners have learned to appreciate that any and every food is better with Pepsi, the Pepsi Dig In program celebrates the restaurants who bring those creative flavors to life. For its third year, the Las Vegas Restaurant Royalty Residency program celebrates not only some special restaurants from around the nation but also Pinky Cole Hayes’ Slutty Vegan.

Las Vegas is full of exuberance, excessiveness, and deliciousness up and down the strip. While those culinary greats tempt at every turn, the Pepsi Dig In Restaurant Royalty Residency is more than just another meal. The specialty event showcases culinary talent on one its biggest stages.

In addition to well-known, highly regarded chefs and restaurateurs, the event gives winning local restaurants and Black restaurateurs an opportunity to expand their audience and influence. The time might be finite, but the impact is everlasting.

As Scott Finlow, Chief Marketing Officer of PepsiCo Away From Home said "Four years ago, we launched the Pepsi Dig In program to help spotlight and uplift underserved restaurants. Through our partnership with MGM Resorts, the Restaurant Royalty Residency gives diners from around the world the opportunity to experience new, delicious flavors made even better with Pepsi. In its third year, the program gives restaurateurs a coveted spot on the Las Vegas Strip, unparalleled visibility for their business, and brings their incredible dishes in front of a larger audience.”

The big name in this year’s event is Slutty Vegan. Pinky Cole Hayes has made her vegan restaurant concept a household name. This event in Las Vegas expands her reach.

As Hayes said, "Las Vegas is a culinary destination where people go to taste the best of the best. It's an honor to be joining Pepsi Dig In alongside an incredible line-up of talented restaurateurs, and be bringing Slutty Vegan's iconic burger to Las Vegas for the first time exclusively to MGM Resorts. The real winners here are the foodies who have so many delicious reasons to keep coming back!"

In addition to Slutty Vegan, this year’s event features Q1227, Taco Mell, Sienna Wings, NYAM, and Vyoone's. While each restaurant’s run is different, the variety of food choices is tremendous. From Jamaican inspired dishes to Afro-Creole French with a twist, diners will be curious to discover the various cuisines.

Even though there are an abundance of Las Vegas restaurants, the Pepsi Dig In Restaurant Royalty Residency is vital to keeping small businesses engaged. Getting guests to appreciate different approaches, cuisines, and concepts is important not just while on vacation but also back at home. No one is saying that the hometown favorite should be forgotten, but it is equally important to try that undiscovered gem down the street.

The concept of everything is Better with Pepsi is the food and beverage that always satisfies on the table, but there is a bigger conversation beyond the plate and the glass. Supporting creative, hard working restaurateurs and giving them a platform to succeed is beneficial for everyone in the culinary community.

This year's Pepsi Dig In Las Vegas Restaurant Royalty Residency runs from September 21 through February 7 at Mandalay Bay's Libertine Social and Luxor's Public House. A new dish will be featured every four weeks.
