S’mores cocktails: Raise a glass to toasted and roasted

While some people might be gathered around the fire with some marshmallows, that sweet flavor is not limited to being flambeed on a stick. Brooklyn Peltz Beckham is shaking up some Baileys' s’mores cocktails that appeal to both Toasters and Roasters.

S’mores are a summertime classic. Some people might recall long lights gazing at the stars and happily munching on that chocolate, graham cracker, marshmallow delight. Nothing seemed complicated and even the most heated debate would be forgotten by morning’s light.

As people get older, that classic dessert can be replaced with a cocktail. Instead of cooking over the flame, people sit back and simply gaze as the fire dances across the darkness.

Baileys S’mores Liqueur offers a nod to that nostalgic taste but shakes up a more adult approach. While delicious on its own, poured in a coffee, or even blended with some ice cream, shaking the spirit into a cocktail is quite enjoyable.

Recently, Brooklyn Peltz Beckham created two custom cocktails that have people picking a side, Team Toast or Team Roast. These two s'mores cocktails are equally enjoyable, but they are quite different.

For the person who prefers a golden toast to the marshmallow, the Toast-tini is a great option. It highlights the caramelization in a subtle way.

In contrast, the Dark N’ Roasty is perfect for the person who prefers the burnt, charred flavors. It is robust, in your face yet quite enjoyable.

Here’s how to make the Bailey's s'mores cocktails.

Dark N’ Roasty

Ingredients:

1.75 oz Baileys S’mores Irish Cream Liqueur

.5 tsp Dried Mole Powder

.75 oz Mezcal

.25 oz Agave

2 dash mole bitters

Method:

Infuse the Baileys S’mores Liqueur with dried mole powder by stirring ingredients together, letting sit for 5 minutes, then straining thoroughly through a coffee filter. Combine all ingredients in a mixing glass. Add ice and stir until cold and strain into glass. Carefully place marshmallow block to float on top of cocktail and torch marshmallow while dusting with cinnamon powder. Top with chocolate dipped graham cracker and dust with mole powder

 Toast-Tini

Ingredients:

 1.25 oz Baileys S’mores Liqueur

.75 oz Vodka

.25 oz Banana Liqueur

.5 Tsp Vanilla extract

.5 oz Maple Syrup

3 dash salt

Method:

Combine all ingredients in a cocktail shaker, add ice and shake for 30 seconds. Pour into a martini glass. Use a piping bag to rim the glass with marshmallow fluff. Lightly torch the marshmallow fluff rim.
