Have you seen the 7-Eleven Lab Store? This innovative retail concept looks to keep the brand ahead of its retail competitors.

The 7-Eleven Lab Store is a far cry from the original Southland Ice House convenience retailing concept. As retail innovation continues to evolve, 7-Eleven wants to be a leader in that category. While the iconic Slurpee will always be part of the brand’s recognition, this retail expansion looks to be more than just convenience.

According to Chris Tanco, 7-Eleven executive vice president and chief operating officer, “Convenience retailing is light years away from the days of bread and milk being sold from ice docks in 1927, and the industry is changing at a faster rate than ever before.”

This statement is speaks volumes. Today’s consumer is quite savvy. With the advent of mobile ordering, convenience is a given. For the retail market, companies need to offer more, specifically a reason to step into the store.

Looking at the 7-Eleven Lab, the concept is almost food hall-esque. With options like the made-to-order coffee beverages (coffee, juices, teas), cold bar treats, sweet treat and “The Cellar,” the concept is definitely an elevated approach to the convenience store. In a way, it is almost like a fast causal food hall.

The variety should drive consumers to decide to make the stop. Many convenience stores appeal to the impulse purchase. This store is more of a destination quality. Instead of grabbing a Slurpee or Big Gulp while getting gas, consumers are purposefully choosing to visit the location.

Specifically piquing consumers’ interest to visit is the Laredo Taco Company taqueria. After acquiring the famous South Texas brand, the location will offer the freshly made tortillas and salsas that people adore. Additionally, this offering will include specialties like carne guisada, barbacoa, picadillo bistec, carnitas. These options aren’t always available in quick-serve restaurants.

Also, this special 7-Eleven location is said to offer “innovation station” special items. For many foodies, these innovative items will be a huge draw for them. The idea to be on the cusp of the next big thing is huge for foodies. Who wouldn’t want to try a savory Slurpee flavor or a product that is just hitting the market?

If 7-Eleven can create a buzz with its innovative offerings, it will quickly become an “it” place to go. Instagrammable foods are and will continue to be huge. Capitalizing on that food trend is extremely smart for the brand.
