Here are Whole Foods 12 Days of Cheeses offerings:
Dec: 12: Klare Melk Truffle Gouda
Truffles and gouda are always a lovely paring. The earthiness from the truffles balanced the creaminess of the semi-firm cheese.
Consider pairing this Whole Foods exclusive with a Monterustico Rosso Piemonte or a Chimay Blue Quadrupel.
Dec. 13: Uplands Cheese Company Pleasant Ridge Reserve
This Alpine-style cheese is similar to a Le Gruyere or Beaufort. With both nutty and grassy flavors, this cheese’s flavor has earned its place as “Best in Show” three times.
Some recommended pairings include Andover Estate Pinot Noir Arroyo Seco and a Rogue Dead Guy Ale.
Dec. 14: Mitica Cordobes
This Whole Foods exclusive cheese is made with sheep milk from Spain. The flavors are rich, buttery with some bright acid nuts.
With the nutty notes, consider pairing this cheese with a Strainge Beast Hard Kombucha or a Tempranillo.
Dec. 15: Cowgirl Creamery Organic Hop Along
This special cheese has been washed in local cider and it aged for 45 days. The cheese has a fudgy texture, sweet aroma and even a lingering savory finish.
Since the cheese is made with cider, consider pairing it with a hard cider or a bold cabernet sauvignon.
Dec. 16: Caseificio dell’Alta Langa La Tur
This cheese combines three milks for rich cheese. While there are fresh and grassy noted, the buttery qualities come through, too.
This cheese would be lovely with a champagne or a light pilsner.
Dec. 17: Sweet Grass Dairy Thomasville Tomme
This semi-firm raw cow’s milk cheese is made with a lot of care. There is a tanginess and has some earthy tones.
A Belgium Ale or even a red blend wine would be a nice pairing choice.
Dec. 18: MonS Gabietou
This cheese has been washed with water and rock salt that comes from local springs. From the earthy mushroom to a touch of fruit, this cheese will surprise you.
A delightful Cabernet Franc or even a Chimay Red Dubbel would pair nicely.
Dec. 19: The Cellars at Jasper Hill Farm Harbison, Prosecco Washed
If you like a little mustard flavor with a cheese, this offering will be your favorite. The prosecco adds little citrus flavor which is a lovely contrast to the butteriness.
This Whole Foods exclusive is lovely with a prosecco or even a saison.
Dec. 20: Emmi Kaltbach Cave-Aged Le Gruyère
The Kalthbach’s sandstone caves add minerality to this cow’s milk cheese. Some bites even have a crystal crunch.
