This week’s episode has the bakers thinking beyond the typical flavors of a classic dessert. Will savory ingredients cause the bakers to stumble or shine? We will have to tune in to see.
According to the Food Network, the Modern Classics episode will feature
"The four remaining bakers vie for the finale as they make mini mirror glaze cakes — perfectly mirrored on the outside with layered mousse on the inside — in the Skills Challenge. In the Master Challenge, the bakers must bake, plate and present a two-course dessert tasting menu feature chilies and fennel. Host Adam Rapoport and judges Jason Smith and Marcela Valladolid decide which bakers have what it takes to move on to the finale."
While the skills challenge requires technical precision, the Master Challenge is all about creativity. Many people don’t want to end a meal with a super sweet bite. A savory note in a dessert isn’t uncommon. The robust flavors can balance the sweetness in the dessert.

Success in this challenge will come from a well paired plate. Since the bakers must create a dessert tasting menu, the bakers must show a progression in the two desserts or complimentary desserts. If the desserts do not pair well, the dessert tasting menu is a failure.
