One of the focuses of this particular episode is allegedly the menu. With a restaurant that features Southern cuisine, the dishes tended to feature a decent amount of spice or heat. While some people enjoy the more pungent flavors and heavier dishes, those menu choices can limit a restaurant’s clientele. Apparently, Gordon looks to change several menu items to make them have more approachable flavor profiles.

Gordon seems to change the menu to make it blander. While these changes make sense, the restaurant owner might not have been too keen on keeping the new menu items. In a BizJournals.com article, the Sacramento restaurant has gone back to its original menu. The owner believed that fans enjoyed the more flavorful dishes and didn’t want to compromise on bland flavors.

I truly wonder if Gordon’s menu was truly “bland.” Sometimes the best dishes don’t have to have spice overload to be considered yummy. Maybe the dishes weren’t bland; rather they were properly seasoned. Then again, everything is a matter of opinion.

This scenario is quite common on many restaurant makeover shows. Even though the owners want to have a more successful business, they are stuck in their ways. The changes could be helpful, but they aren’t in a position to fully accept that they are wrong. Why would they put themselves in this television show if they don’t want to fully embrace the change? That question has never truly been answered.
